Chicken Salsa 

So this is going to be my very first recipe post.  I have been meaning to do one for a while but I never seem to remember to snap pictures while I am cooking. 

So today was a little different then usual because I was called for jury duty.  So with that I had no idea when I would be able to get home.  And since I knew it would be the end of the world to have pb&j sandwiches for dinner I pulled out my handy dandy crockpot.

This weekend I did my monthly Costco trip so I have a fairly good stock of pretty much everything.  Costco is my happy place, you just can’t walk into Costco without a smile on your face.

So here we go …

What I did was dump a jar of salsa in the bottom of my crockpot. And you can use whatever salsa you have. Hopefully if our garden has a good crop I will be able to jar a few things of homemade salsa.


Then I tossed a serving of chicken tenders from the family package at Costco.  I love how you can buy chicken in bulk and it already be separated into the perfect amount.


I left that on low for 6 hours while I was gone for the day.  And when I got home the house smelt like salsa and it was amazing.  Next I pulled all the chicken out and shredded it up and then dumped it back into the crockpot.


Next I tossed a good bit of shredded cheese on top of chicken and salsa in the crockpot. I know my measurements are spot on.  While I was letting the cheese melt I started the rice.


We have some leftover minute rice from a chicken bog a few months ago so I am trying to find ways to use it all up so we can get back to regular rice.  But what I like to do is get white rice and mix in sazon and adobo seasonings into the rice before it cooks.  That is my favorite way to eat rice.  The sazon turns the rice a beautiful yellow and the mixture of the two seasonings are perfect.

Next you just assemble everything.  I opened up a can of refried beans to add in between my rice and chicken.  I had planned on adding corn to the chicken mixture but I didn’t have any in the pantry and was to lazy to drive to the grocery store.


Mily opted out of the beans but loved the chicken and rice.  She even said that I needed to make this again.  Her only complaint was that I made her a plate of chicken and rice instead of a bowl.  And if that is the only issue I will take it!  The next test will be when the husband gets home from the race shop and eats dinner.
